Today I went for the latest experiment with adding vegtables to muffins. The end result is still to be hailed a major success - but i'm pretty sure if you like beetroot, then you'll like these. I'm not a fan, so the tasting session wasn't one I was really looking forward too, and on the back of a very hot chilli embelished Chinese stir fry, I'm not sure my timing was the best. But needless to say you can taste the Beetroot chunks. So if beetroot is your thing then try this one out. I'll be offering them round tomorrow to get some other opinions.
I think they'll go nicely in a bowl of hot custard for tea tomorrow!
In a large bowl mix together:
375g self raising flour
220g castor sugar (I ran out so I used some soft brown sugar too, which has made them a darker colour)
In a small bowl mix together:
90g melted butter
half a cup of sour cream
quarter cup of milk
2 large eggs
Put the wet into the dry, mix together
Dice up a couple of small beetroots - enough to fill a one cup measure
add them to the mix and stir in.
Divide into 12 muffin cases
Bake Gas 5/6
20-25 mins
