Chocolate Pineapple Muffins

Well this is the kind of combination you get when you ask your 'just visiting from Canada' friend what type of muffin they'd like to celebrate their return trip. Chocolate was the initial response, but when challenged that 'just chocolate' would be a bit boring Abbi added 'pineapple' much to the shock of the kids around her - but it was a good call - they taste terrific - very squishy and yummy. So much so that I got our latest arrival to model the muffin for us - Annabelle, pity she's too young to try one herself, at just a couple of weeks old, but she is equally squishy and yummy!!


In a large bowl sift together:
300g Self-raising flour
50g cocoa
Stir in:
220g caster sugar

In a small bowl mix together:
90g melted butter
half cup sour cream
three quarters cup milk
1 large egg

Mix the wet into the dry the stir in:
1 cup drained crushed pineapple

Divide the mixture between 12 muffin cases 
Bake for 25 minutes on Gas 5
Leave in the tin for a few minutes before removing onto a wire rack to cool
