I should have made these muffins yesterday, for these guys who helped out all day at a garden work party at the Father's Heart Ranch,(check out their website for the wonderful work they do) http://www.fathersheartyouthranch.co.uk/, but I ran out of time.
However, I managed to fit the baking in between things today, so that most of the gardeners still got to sample them. Those that didn't will just have to come back and garden some more next time the meadow needs mowing and I'll bake again.
In a large bowl mix together:
375g self-raising flour
220g caster sugar
grated peel of 1 lemon
In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup lemon juice
2 large eggs
Mix the wet into the dry
Stir in 1 cup fresh blueberries
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool
