Christmas Muffins

I made my first batch of Christmas muffins this year, in time for the advent calender to start. I made a new one of those too - what a creative busy bunny I've been this evening.

In a large bowl mix together:
375g self-raising flour
120g dark brown soft sugar
100g caster sugar
the grated rind of one orange

In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup milk
2 large eggs

Mix the wet into the dry then stir in:
1 cup mincemeat

Divide the mixture between 12 muffin cases
Bake on Gas 5 for 25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool.


They turned out a bit soggy and overflowing - which is just scrumptious. They'll taste delicious in a bowl of custard too. Mince pies in a muffin!
