They are most popular by far, so I figured you may as well start with the most successful muffins ever and progress from there.
This is all you need to find ~
300g self raising flour
220g castor sugar
50g cocoa powder
90g butter
1/2 cup sour cream
3/4 cup milk
1 large free range egg (courtesy of Freckles, Honky, Camilla or Ladysmith!)
65g white chocolate chips
65g milk chocolate chips
65g dark chocolate chips
and this is all you need to do with it ~
In a small pyrex bowl melt the butter for 45 seconds in a microwave, until soft.
In a large 'yellow' bowl mix together the sugar, (sifted) flour and (sifted) cocoa.
Now the butter has cooled slightly, add milk, egg and sour cream, and mix together.
(you don't have to mix very much, no machinery required, just a wooden spoon)
Make a well in the dry ingredients and pour in the wet ingredients. Mix together.
Add the chocolate chips and stir in.
Divide into 12 muffins cases, then
Bake on gas 5 for 25 minutes
when done - leave in the tray for a couple of minutes before removing to a wire rack to cool. Just long enough so that you don't get burnt by eating them, but soon enough so that they are still hot and adorable to eat with vanilla ice cream.
Enjoy!!
warning: these muffins may seriously damage your diet!!!
Jack proving its possible to bake chocolate muffins, even being a bloke!
I always have trouble with "cups". Seems that my cups are not standard size. Can you say how many millilitres half-a-cup is?
