Pomegranate and Kiwi Muffins

It's summer here today - too hot to be outside, so what's better than putting the oven on and melting in the kitchen instead. Irony at it's best! But I have managed to create two new flavour combos this afternoon, here's the first one~

In a large bowl mix together:
375g self raising flour
220g caster sugar

In a small bowl mix together:
90g melted butter
half a cup sour cream
quarter cup milk
2 large eggs
Mix the wet into the dry
Then stir in:
the seeds of one pomegranate
2 peeled and dices kiwi fruit
(that's about half a cup of each)

Divide between 12 muffin cases
Bake Gas 5/6
For 20-25 mins
Leave in the tin for a few minutes before removing to a wire rack to cool
