Ris Creme

This is one tradition I intend to keep alive in England this year. Thanks to Kari for showing me how to make this most fabulous of deserts. 

In Norway you have to make a rice pudding on Christmas Eve, some of it has to be left out for the Nisse, so that they keep your animals safe all year (you don't want to mess with those Nisse!)

Traditionally there is a whole almond in the pudding and if you get it in your spoonful you have to keep it in your mouth without any one else knowing you have it - then you win!! I'm not sure what you win, but you win something.

Anyway the left over pudding is mixed with the cream the next day to make a most heavenly desert which every self-respecting Norwegian would have in their homes at Christmastime to offer to any random visiting English woman that happened to turn up out of the blue.
It's basically cold rice pudding mixed with whipped cream. It is to die for, you eat it with some kind of red berry sauce - raspberry coulis will have to do for this year. 

So all you do is:
Make a rice pudding on the stove
Leave it to go cold
Stir in thick whipped cream
Store in the fridge
Serve with raspberry coulis

Ginger Cream Pud!

Amazingly not a muffin today - but a treat none the less. This is my easy-peasy pudding, that looks fantastic and takes no time at all. I first ate this at aunty Jose's house - thanks for the recipe aunty Jo.

You will need:
one packet of ginger nut biscuits
a carton of whipped cream (10 fl oz)
some orange juice (150ml)
some grated chocolate

Dip a biscuit in the orange juice. Remove straight away and 
Spread one side of it with whipped-up whipped cream.
Repeat with all teh biscuits, joining them together into a round, or line as yu go. (You can do any pattern you like, making initials, or even a tower, but a tower falls over quite easily and isn't easy to store in the fridge or serve) 
Cover the outside with the remaining whipped cream
Sprinkle with grated or crumbled chocolate
Pop in the fridge for a little while before serving - this will help the bisuits absorb the liquid and go all mushy - in a good way!

You could try an alcoholic version by replacing all or some of the orange juice with Rum, or something similar - but as I'm driving tonight, I went for the alcohol-free version.
