Today we are having these little beauties for our Bring and Share supper this evening. I figure the combo will work - but time will tell.
Drain a can of mandarins - reserve the juice
In a large bowl mix together:
375g self-raising flour
220g caster sugar
In a small bowl mix together:
90g melted butter
half cup sour cream
mix 2 heaped teaspoons of instant coffee with a few drops of boiling water to dissolve, stir well, then make up to a quarter cup with the juice from the can of mandarins
2 large eggs
Mix the wet into the dry
Stir in:
1 cup of chopped drained mandarins
Divide the mixture between 12 muffin cases
Bake of Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before moving onto a wire rack to cool

Mandarin and Cranberry Muffins
In honour of my grandson's first visit to my house, and the fact that he would get to meet his great-grandad while he was here, I thought I ought to bake something just a bit delicious, and these certainly hit the spot.
In a large bowl mix together:
375g self-raising flour
220g caster sugar
In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup milk
a few drops of vanilla essence
2 large eggs
Mix the wet into the dry then stir in:
half cup chopped, drained, tinned, mandarin's
half cup dried cranberries
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool
Suitable for all generations!!! Well not the newborn ones of course, but just give him time and he'll soon be in the kitchen helping granny bake and licking out the bowl.

Mandarin and Marmite Muffins
Post-wedding muffins had to be something special - and as our lovely friends Charlotte and Devan came all the way from Canada to celebrate the day with us, I thought I should honour my promise to Charlie that I made a few years ago now, to bake her some muffins with Marmite in them.
Marmite is, as you may know, either a love or hate thing. Personally I HATE it, but for some reason I had a jar in the cupboard, so I took the plunge and guessed entirely about how much to put in, then I boxed some of them up and sent the muffins off as a gift - I do hope you like them.
The rest I kept back to test out on my son's new Mother-in-law, as it was her birthday. She loved them, as she does Marmite - so I guess I guessed right with the dollop I put in!

one eight cup (half the quarter cup) Marmite, made up to the quarter cup with the mandarin juice from the tin.

Bake on Gas 5/6 for 20-25 minutes

Whiskey and Orange Muffins
The last weekend of the Easter holidays has come and gone in a most wonderfully bizarre manner.
Here are a few words and phrases to sum it all up ~
chicken poppers, gel nails, the Grandad convoy, lakeside sunset, Absolution, >>--love wins---->, vegetarians, Badger and Squirrel, Coombe Abbey, champagne celebrations, the post-midnight time-exposure photo shoot, new shoes, double dogs, reggae, and hog roast! #cowpatt
My niece has been left, once again, wondering how it is that she can possibly be related to either me, or her dad. But she did get to meet her first Norwegian during the weekend - I did mention it had been bizarre :)
Anyway lots more happened, but I know it's the recipe that you really want so I'll get on with the recipe.
During all of these shinanigans I made muffins, requested by my son, for his uni mates - hence the concoction below - what I didn't realise is that the whiskey I chose to use had been bought in Zambia for about $1, so for all I know, I may well have put paraffin in the muffins - but they tasted great and we are all still alive to tell the tale. Next time I'll use the posh whiskey he keeps in their boxes ...

Chocolate Mandarin Muffins
Well it's the closest I'm going to get to a Chinese New Year Muffin - Mandarin!!!
Tenuous link I know, But they are delicious
In a large bowl sift together:
300g self-raising flour
50g cocoa
Stir in:
220g caster sugar
In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup juice from a 175g tin of mandarins
half cup milk
2 large eggs
Mix the wet into the dry
Stir in:
one cup of drained, diced mandarins topped up with
milk chocolate chunks
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool
And there you have the most sticky-licious muffins -

Mandarin and Milk Chocolate Chip Muffins
Today's invention:
Drain a 175g can of mandarins (you're allowed to drink the juice while you're baking) and chop into smaller bits
In a large bowl mix together:
375g self-raising flour
220g caster sugar
In a small bowl mix together:
90g melted butter
150ml sour cream
quarter cup milk
2 large eggs
Mix the wet into the dry
Stir in the diced mandarins and
100g milk chocolate chips
Divide into 12 muffin cases and
Bake Gas 5/6
For 20-25 mins
Leave in the tin for a few minutes before removing onto a wire rack to cool
