Pear & Nutmeg Muffins

Today's batch were meant for a get together that isn't happening tonight after all, which could well result in me having visitors here later - I have however asked them to turn up with a wallpaper scraper if they do come round.
In a large bowl mix together:
375g self-raising flour 220g caster sugar
teaspoon ground nutmeg

In a small bowl mix together:
90g melted salted butter
half cup sour cream
quarte cup cloudy apple juice
2 large eggs

Mix the wet into the dry
Stir in:
1 cup peeled, diced pears

Sprinkle cocoa powder on the top of each muffin
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before moving onto a wire rack to cool

Pear and Coffee Muffins

Tonight's little offering will be these delicious looking muffins.
Hope they go down well with my 'homies' in Tamworth.


In a large bowl mix together:
275g self-raising flour
220g caster sugar

In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup very strong coffee
2 large eggs

Mix the wet into the dry
Then stir in :
1 cup diced and drained, tinned pears

Divide the batter between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool

Pear and Ginger Muffins

This is birthday invention number two!!

In a large bowl mix together:
375g self raising flour
220g demerera sugar
1 teaspoon ground ginger

In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup pear juice (drained from the can)
2 large eggs

Mix the wet into the dry


Then stir in (1 cup measure of fruit in total):
220g can pears (drained and diced)
quarter cup glace ginger
quarter cup milk chocolate chunks (enough to make up the cup!)

Divide between 12 muffin cases
Bake Gas 5/6 for 20-25 mins
Leave in the tin for few minutes before removing onto a wire rack to cool

Pear, Nutmeg and Lime muffins

Jack would say the lime was a step too far, but then they aren't even out of the oven yet, so time will tell and the proof of the pudding will deifinitely be in the eating later this evening - if we can wait that long.

This time I stirred 375g self raising flour, 220g caster sugar and about half a teaspoon of nutmeg,
together in a large bowl.
then I mixed together (in a small bowl) - 90g melted butter, a quarter of a cup of milk, half a cup of sour cream and 2 large eggs fresh fr
om the hens, then grated in the zest of one lime.I then put the wet into the dry, and stirred together.
Add 1 cup of chopped pears
(I used tinned ones)
Then divide the mixture evenly between the 12 muffins cases in a muffin tray
and bake for 20-25 mins on gas 5/6

I'll let you know who was right - lime or no lime!
