
Today is big bake day, my dad is having a house warming and has ordered three dozen muffins to cheer his guests. If I was making ice cream, he'd choose rum and raison, so I figured i'd try and create a muffin in his honour this morning. so while I wait for the hens to lay more eggs for the next batch of muffins, I'll put the recipe up, or I might just get confused as to what went in which recipe!
Soak a cup of raisons in a splosh of rum so they infuse nicely while you make the rest of the recipe
In a large bowl put 375g self raising flour, mixed with 220g muscovado sugar.
In a seperate bowl melt 90g butter, add quarter cup of rum, half a cup of sour cream, 2 large eggs. Mix together
Put the wet ingredients into the dry. Mix together, then add the rum soaked raisons
