Normally with muffins you quickly mix the ingredients together and don't faff about - they're not cup cakes after all, but if you don't crunch the muscavado sugar up enough you'll get chunks of crispy sweet brown sugar in your muffins - so bash it well with a wooden spoon to break up the sugar.
In a large bowl mix together:
375g self raising flour
200g dark muscavado sugar
30g caster sugar
90g melted butter
half cup sour cream
quarter cup milk
2 large eggs
Mix the wet into the dry
Then stir in:
half cup chopped dates
half cup chopped walnuts
Bake on Gas 5/6 for 20 - 25 mins
Leave in the tray a few minutes before removing to a wire rack to cool
