Persimon Muffins

Here's a new one on me - well that's what I thought until my daughter showed up and reminded me that I'd tried to make her eat weird and exotic fruit, including this one, when she was a little girl - when they first invented it!!

Anyway I saw a pack of persimon and thought I'd see what they tasted like. I recognised them once I turned them the right way up, and was pleasantly suprised with how sweet they taste. I used one and half persimon to make the muffins, so I'll just have to eat the rest au natural.


In a large bowl mix together:
375g self-raising flour
220g caster sugar

In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup milk
2 large eggs

Mix the wet into the dry 
Stir in:
one cup peeled, diced Persimon

Divide the mixture between 12 muffin cases
Bake Gas 5/6 for 20-25 mins
Leave in the tin for a few minutes before removing onto a wire rack to cool
