Today is 11/12/13 here in England, so to mark the occasion I'll post a recipe.
This is the recipe I made at the weekend when I had friends over for tea. Alex reckoned she couldn't bake muffins so I was determined she got to see how easy it is to do, and despite having the help of a two year old, we managed to bake a delicious batch of festive muffins.
In a large bowl mix together:
375g self-raising flour
220g caster sugar
In a small bowl mix together:
90g melted butter
half cup sour cream
quarter cup milk
2 large eggs
Mix the wet into the dry then stir in:
half cup dried cranberries
half cup white chocolate chunks
Divide the batter between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a couple of minutes before removing onto a wire rack to cool
And as you can see the little 'un loved them .
