In Norway you have to make a rice pudding on Christmas Eve, some of it has to be left out for the Nisse, so that they keep your animals safe all year (you don't want to mess with those Nisse!)
Traditionally there is a whole almond in the pudding and if you get it in your spoonful you have to keep it in your mouth without any one else knowing you have it - then you win!! I'm not sure what you win, but you win something.
Anyway the left over pudding is mixed with the cream the next day to make a most heavenly desert which every self-respecting Norwegian would have in their homes at Christmastime to offer to any random visiting English woman that happened to turn up out of the blue.
It's basically cold rice pudding mixed with whipped cream. It is to die for, you eat it with some kind of red berry sauce - raspberry coulis will have to do for this year.
So all you do is:
Make a rice pudding on the stove
Leave it to go cold
Stir in thick whipped cream
Store in the fridge
Serve with raspberry coulis
