Chocolate and Courgette Muffins

This creeped out the happy chappies that went to Thurlaston for an open house yesterday afternoon. What had I put in the chocolate muffins? First to sample them was Lucy who's around 9. She had a bite, then came over and asked why I'd put Cucumber in the muffins! I told her it was Courgette and she just looked bemused, her dad then continued to try to convince her that no-one would ever put courgettes in a muffin, and that I was having her on. He just wouldn't believe me - true as it was.

These particular muffins have been tried before. I once took them to a group of friends one particular evening and didn't say anything. They all loved them. well, that was until the man who loved them the most saw that they were running out and announced to anyone who arrived late that the were 'Bogey Muffins'. This had the desired effect and put some people off eating them. 

So if you want to get some veg down your kids, they'll see chocolate and usually not notice the courgette, and if they do - just tell the boys they are 'Bogey Muffins', and they'll eat them for a dare I'm sure.
Either way they are quite delicious, so get over the shock and go bake some to see for yourselves.

In a large bowl sift:
300g self raising flour
50g cocoa powder
Mix together with 220g caster sugar

In a small bowl mix together:
90g melted butter
half a cup of sour cream
three quarters cup of milk
1 large egg

Mix the wet into the dry then
Stir in 1 cup of finely diced raw courgette

Divide into 12 muffin cases
Bake Gas 5/6
20-25 mins

After a couple of minutes remove to cool on a baking tray
