My daughter suggested I tried this recipe that she found on a blog while searching food blogs the other day - unfortunately it was in Polish and the google translate was not the most useful resource at the time, so I guessed a lot of it and generally made it up as I went along - but in the end I did manage to make Coca Cola Muffins and the kids at Sunday lunch thought they were lovely - I, on the other hand, thought they needed a lot more Cola flavour. But here's the recipe anyway ~
In a large bowl mix together:
375g self-raising flour
220g caster sugar
In a small bowl mix together:
90g melted butter
half cup sour cream
150ml coca cola
2 eggs
Mix the wet into the dry.
Stir in
half cup chopped walnuts
50g milk chocolate chunks
Divide between 12 muffin cases
Bake Gas 5/6 for 20-25 mins
Leave in the tin for a few minutes before removing onto a wire rack to cool.
Once cooled decorate the tops with Cola Icing:
Mix 100g icing sugar with 1 tablespoon coca cola
Stick cola jelly sweets on the top of each one before the icing sets!
