Having made yet another batch of Christmas Muffins today I rumaged through the baking basket to see what other flavour I could throw together, and voila the Rocky Road Muffin idea happened.
I'm not actually sure of the proper ingredients for a real rocky road, I usually use a different set everytime!
I didn't have any rice crispies, but I threw together random amounts of milk and white chocolate chips, marshmellow chunks, glace cherries, crushed hazlenuts and butterscotch pieces into a chocolate muffin recipe and came up with this.
In a large bowl mix sift together:
375g self-raising flour
50g cocoa
Stir in:
220g caster sugar
In a small bowl mix together:
90g melted butter
three quarters cup of sour cream
half a cup of milk
a few drops vanilla essence
2 large eggs
Mix the wet into the dry then stir in:
one cup of mixed rocky road ingredients
(I used some combination of choc chips, nuts, cherries, marshmellow and toffee pieces - see above)
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 mins
Leave in the tin for a few inutes before removing onto a wire rack to cool
well, as chocolate muffins go they were delicious, but as for Rock Road- they needed the rice crispies or chunks of biscuit in there too, and the marshmellows melted, making them very gooey, but yummy.
