Sticky Lemon and White Chocolate Muffins

To go with the last recipe for our Christmas party this weekend I made these little lumps of yumminess!

In a large bowl mix together:
375g self-raising flour
220g caster sugar
the shaved peelings of one lemon

In a small bowl mix together:
90g melted butter
half cup sour cream
juice of one lemon made up to a quarter cup measure with milk
2 large eggs

Mix the wet into the dry
Then stir in:
quarter cup lemon curd
100g white chocolate chips

Divide the mixture between 12 muffin cases and Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes until removing onto a wire rack to cool.

For that bit of extra lemony stickiness ~
Mix together icing sugar and lemon juice to make a sticky pouring sauce - drizzle over the top of the muffins once they are on the wire rack
