It was pizza night while we watched the climax of the Six Nations Rugby on Saturday, so muffins were required to cope with the stress inflicted upon us by the France v Ireland match going to the last two minutes while we still, remarkably, had a chance to win the whole event.
Unfortunately 'that forward pass' will be remembered for a while as it scuppered our chances of hoisting the trophy.
We consoled ourselves with chocolate and cranberry muffins, floating in a bowl of vanilla and raspberry ice cream. as you do!!
In a large bowl sift together:
300g self-raising flour
50g cocoa powder
Stir in:
220g caster sugar
In a small bowl mix together:
90g melted salted butter
half cup sour cream
three quarters cup milk
1 large egg
Mix the wet into the dry then stir in:
100g white chocolate chips
half cup dried cranberries
Divide the mixture between 12 muffin cases
Bake on Gas 5/6 for 20-25 minutes
Leave in the tin for a few minutes before removing onto a wire rack to cool
