Mint Choc Chip Muffins

Our Jack is about to go longboarding with a few mates, one of whom is turning 27 tomorrow, so we dashed to the kitchen before she arrived, to make her a batch of muffins to celebrate. Jack wanted chocolate, so I asked him to find something interesting to go with it, he decided peppermint essence was the way forward, so if you like to eat cake at the same time as nibbling on 'After 8's', then you'll love this flavour. 


We managed to get the right amount of candles onto the top of just one muffin, and didn't even set off the smoke alarm. Which was quite suprising.


In a large bowl mix together:
300g self raising flour
50g sifted cocoa
220g caster sugar

in a small bowl mix together:
90g melted butter
half cup of sour cream
three quarters cup of milk
1 large egg
2 teaspoons of peppermint essence

mix the wet into the dry ingredients
then stir in:
100g white chocolate chips
100g milk chocolate chips

Divide between 12 muffin cases
Bake on Gas 5/6
for 20-25 mins
leave in the tin for a few minutes before placing on wire rack to cool 

Then gift wrap for the 'birthday girl' to take home for her 'birthday breakfast'.
